The wood offers extra complex sugars that the fomenters have available to continue to ferment. This allows for the strength of the wine to increase over time as well as adding a distinct flavor that the wood provides in the wine infusion. Many times wine will be produced in different qualities of wood allowing for variation between wines produced with the same grapes. Many times, different additives or ingredients may be added to change the flavor or consistency of the wine over time. When adding oils to the wine or infusing flavorings, the flavor and quality of the wine can be drastically changed. Even small changes to the wine may make the wine more favorable between consumers.
